A professional waxer will do whatever you ask her to do.
Regardless of what you call it - if you tell her you want it all off, or just a landing strip, or whatever, she'll do it.
Just make sure when you book the appointment, that you let them know, so that they can schedule enough time.
If you are asking about the disposable paper panties - yes, a professional salon should offer to let you wear them while you are having the service done - this does not affect whether or not she is removing all the hair, it's just for your comfort and privacy.
